A new take on the traditional Beef Tenderloin Primal is our Tenderloin Wellington. The Wellington cut is used in high scale restaurants - see our YouTube Channel to watch how the Greenwich Country Club prepares our Beef Wellington! The only difference is that the Wellington will be more uniformly cut and shaped, compared to the traditional Tenderloin primal which is thicker in the middle, and tapers off toward the end of the muscle. Our Tenderloin Wellington contains only the meat, not the pastry.
